Sweet Potato Souffle

\Ingredients

  • 4 lbs. sweet potatoes
  • 1/2 cup butter
  • 1/4 cup Southern Comfort
  • 1/3 cup orange juice
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 cup chopped pecans
  • 1 tablespoon shredded orange rind
  • 1 cup of mini-marshmallows
Directions
  • Cook washed sweet potatoes in water for 35 minutes
  • Drain and peel, Mash, adding butter
  • Add Southern Comfort, juice, sugar, spices
  • Place in 1 1/2 quart buttered casserole dish
  • Top with nuts and orange rind. Bake at 350 degrees for 20-30 minutes.
  • If topping with marshmallows, place on the casserole and bake for an addition five to seven minutes or until marshmallows are melted.
