Sweet Potato Souffle
\Ingredients
- 4 lbs. sweet potatoes
- 1/2 cup butter
- 1/4 cup Southern Comfort
- 1/3 cup orange juice
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cloves
- 1 teaspoon salt
- 1 cup chopped pecans
- 1 tablespoon shredded orange rind
- 1 cup of mini-marshmallows
Directions
- Cook washed sweet potatoes in water for 35 minutes
- Drain and peel, Mash, adding butter
- Add Southern Comfort, juice, sugar, spices
- Place in 1 1/2 quart buttered casserole dish
- Top with nuts and orange rind. Bake at 350 degrees
for 20-30 minutes.
- If topping with marshmallows, place on the casserole
and bake for an addition five to seven minutes or until
marshmallows are melted.
