Low carb sweet potato casserole

Ingredients
  • 2 cans (16 ounces each) sweet potatoes or yams (about 4 cups)
  • 1⁄2 cup Splenda sweetener\
  • 4 egg whites or 1⁄2 cup liquid egg substitute
  • 1⁄2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1⁄2 cup brown sugar or brown sugar substitute
  • 1⁄4 cup chopped pecans
  • 1⁄4 cup all-purpose flour
  • 2 tablespoons light tub margarine
  • Butter-flavored cooking spray
Directions
  • Preheat the oven to 350°F. Lightly grease (or spray with cooking spray) a shallow 2-quart baking dish.
  • Combine the sweet potatoes, sweetener, egg whites, salt, and vanilla in a food processor or blender and process until smooth.
  • Spoon into the baking dish.
  • Stir together the brown sugar, pecans, flour, and margarine in a medium bowl.
  • Lightly sprinkle over the sweet potato mixture.
  • Spray the top with butter-flavored spray
  • Bake until lightly browned, about 30 minutes.
