Easy Sweet Potato Casserole

Ingredients
- 4-5 pounds sweet potatoes, peeled and boiled
- 1 (8-ounce) can crushed pineapple
- 3 tablespoons butter, softened
- 4 tablespoons brown sugar
- 8-10 marshmallows
Directions
- Whip sweet potatoes with pineapple, 2 tbsp butter
and 2 tbsp brown sugar.
- Place in a 9 or 10 inch casserole. Dot with
remaining butter and sprinkle with remaining brown
sugar.
- Bake for 30 minutes at 375 degrees.
- Place marshmallows on top five minutes before
finishing. The casserole may be baked earlier and
reheated later, but don't add the marshmallows until
you're ready to serve.
