Easy Sweet Potato Casserole

• 4-5 pounds sweet potatoes, peeled and boiled
• 1 (8-ounce) can crushed pineapple
• 3 tablespoons butter, softened
• 4 tablespoons brown sugar
• 8-10 marshmallows

• Whip sweet potatoes with pineapple, 2 tbsp butter and 2 tbsp brown sugar.
• Place in a 9 or 10 inch casserole. Dot with remaining butter and sprinkle with remaining brown sugar.
• Bake for 30 minutes at 375 degrees.
• Place marshmallows on top five minutes before finishing. The casserole may be baked earlier and reheated later, but don't add the marshmallows until you're ready to serve.
